1 pound breakfast sausage
2 cups almond flour
1 ½ tsp. Baking powder
¼ tsp. Salt
1 tbsp. brown sugar
3 eggs
1 tsp. vanilla extract
4 tablespoons butter, melted
4 tablespoons coconut oil, melted
4 tablespoons maple syrup
Start browning sausage in a medium skillet over medium-high heat, crumbling the sausage with a spoon or spatula as it cooks.
Meanwhile, preheat the oven to 350 degrees; grease 13x9 casserole dish.
When the sausage is done cooking, use a paper towel to soak up excess grease in the sausage pan..
In the mixer bowl, add remaining ingredients, then beat with mixer until smooth, about 1 minute.
Spread cooked sausage across bottom of prepared baking dish in an even layer.
Pour batter over sausage.
Bake for 22-27 minutes or until the top is golden brown. Slice and serve with additional syrup, if desired
Prepare scrambled eggs while it bakes.
